The Shape of Water

Guillermo del Toro is my favorite director and I loved this movie so much it made my heart burst! So I had to make a cocktail inspired by it. I chose a riff on a pisco sour as the creature in the movie is an Amazonian river god and eggs feature prominently in the film. Every frame is painted in shades of green & teal so I used green chartreuse and a dab of blue curacao for color and an herbal flavor. The finishing touch was a little dehydrated red seaweed shaped in a heart, symbolizing Eliza's love which appears in the film as her relationship with the creature grows - she sports a red headband, red shoes and a red coat. The seaweed slowly imparts a salinity to the drink as you sip.

2 oz pisco

1 oz lime juice

.5 oz green chartreuse

.25 oz blue curacao

1 fresh egg white

dehydrated seaweed garnish

Put the fresh egg white into an empty shaker a dry shake until frothy. Add ice and all other ingredients except seaweed and shake until the outside of the shaker is nice and frosty. Strain into a coupe and garnish with dehydrated seaweed.
